Know about kabuli chana or chickpeas or Punjabi chole
Chickpeas, kabuli chana, or chole is a delicious, sour-salty Punjabi dish. It is a curry item likely to be served with Nan, Puri, paratha, bhature, or anything else. It is very classy and one of the most popular dishes in Punjabi cuisine.
Chickpeas, also known as ‘kabuli chana’ in Hindi, is like normal gram itself. It is black and white. It is a little bit bigger than other grams. Chickpeas are used to prepare dishes like chips, chickpea flour, crunchy chana, curry and many more. Here we ought to prepare Chickpeas chole. So let’s proceed to our concerned topic:
Ingredients for Punjabi chole:
- White chickpeas – 2 cups
- Onion – 4-5 (chopped in long strands)
- Ginger-garlic paste – 2 tablespoons
- Tomatoes – 2 small (chopped into dice)
- Salt – 2 tablespoons
- Turmeric powder- 3 teaspoons
- Black pepper – 1 1/2 teaspoon
- Cumin seeds – 1 tablespoons
- Coriander powder – 1 tablespoon
- Bay leaf – 1
- Dried red chilli – 2
- Green chillies – 4 (chopped)
- Chopped cilantro – 1 cup
- Refined soybean oil – 2 tablespoon
Methods of preparation of tasty Punjabi chole
- First, soak all the chickpeas into water overnight, likely for 6-7 hours.
- Now, heat a pressure cooker. Add oil to it, and after it gets heated, add cumin seeds, red chilli, and bay leaf.
- Saute them for a minute on medium flame, then add all the chopped onions. Cook well until the onions are half and brownish pink in colour.
- After that, add ginger-garlic paste and tomatoes to it. Cook the entire ingredients well and sauté them, adding wholesome spices to them.
- Now, put all the soaked chickpeas to it and turn the flame high. Fry it for 2 minutes, and as the aromatic fragrance arises, add 4 cups of water to it.
- Stir well for a minute and close the lid. Cook the chole on medium heat under pressure for four whistles.
- As the vapour is rereleased, cook the chole for 5 minutes on high flame. As the thick gravy appears, turn off the flame and remove the chickpea chole to a plate. Garnish with chopped cilantro and serve hot with any of the chapatti items.
