Hey guys, today my dish is on non-vegetarian cuisine. It is ‘Egg fried rice’. Egg fried rice is a Chinese style of cooking/frying rice with different condiments and ingredients.
Fried rice can be prepared in many styles; vegetarian as well as non-vegetarian. Fried rice typically means to fry rice by several varieties and ingredients. It can be served as lunch or as a dinner.
Well, this egg fried rice in a Chinese way is full of flavor and fragrance. It’s blowing steam smells like egg rice with fragranced toppings and garnishing.
It tastes excellent when hot. You can have your experiments in this way like you can add tomato, lemon, curry leaves or any other condiments like this.

Ingredients for Egg fried rice:-
- Boiled rice- 1 cup
- Eggs- 2
- French beans- 100 gm
- Carrots– 100 gm
- Capsicum- 100 gm
- Spring onions– 1 bunch
- Soya sauce- 2 teaspoons
- Ghee- 4 tablespoons
- Salt- as per taste
- Indian bay leaf– 1
- Cumin seeds- 1 teaspoon
- Cinnamon sticks- 4
- Cilantro leaves- 1 bunch
- Black pepper– ½ teaspoon
- Cumin powder- ½ teaspoon
- Red chili powder- ½ teaspoon
Methods to prepare Egg fried rice:-
- In a mixing bowl, break the eggs and mix it with salt, black pepper and red chili powder.
- Prepare an egg omelet and cut the omelet into medium sized pieces for approx 10-15 pieces. Keep it aside.
- In a frying pan add ghee. When the ghee gets melt and hot add bay leaf, cinnamon sticks and cumin seeds. Sauté it for one minute.
- After that add the cut veggies except cilantro and spring onions. Cook the veggies for 4 minutes.
- Add spring onions and boiled rice. Stir thoroughly.
- After one minute add salt, cumin powder and soya sauce.
- Fry these ingredients for 2-3 minutes in a medium flame.
- Add the cut pieces of omelet and mix it thoroughly.
- Garnish the fried rice with cilantro leaves and serve hot with curd dip or chutneys.

Following are some of the minor mistakes that can take place while cooking. So, note these on your mind and don’t worry if mistake happen; it will be recovered by your practices.
Tips to keep in mind while cooking Egg Fried rice:
- Mostly mistakes are seen, in black pepper and salt. I agree it is confusing for newcomers but it can be solved. Black pepper use is minimal, you can use even ¼ teaspoon of black pepper.
- About salt confusion, you can check as by the taste. By mistake if you sprinkled extra salt then add few drop of lemon in rice. It will balance the taste.
- Don’t boil the rice for long time. In cooker, it will take 2 whistles and 1 ¼ water as the rice.
- You can also add some ghee into the rice while boiling. It will make it whitish and will not be sticked to each other.
Cut the veggies into thinner pieces. Remember the taste and texture of Chinese dishes depends upon the cutting of veggies.
